Easy Chicken Salad Made With Store Bought Rotisserie Chicken

Need a super quick and simple lunch or dinner? It doesn’t get much easier than this chicken salad, and it’s fantastic for meal-prepping!

Our little cheat is using a store bought rotisserie chicken. Let’s be honest, these rotisserie chickens are so much tastier than homemade. Yeah, I said it.

 

Or if you are even lazier  needing an even quicker chicken salad, Costco sells already pulled chicken next to their rotisserie chickens. I totally buy it.

Ingredients Needed For Chicken Salad (screenshot for grocery list)

  • Fully Cooked Rotisserie Chicken
  • Celery
  • Red Onion
  • Mayonnaise
  • Brown Mustard

How Do You Make Easy Chicken Salad

  1. Pull the chicken meat from the bones. This should get you approximately 3 cups of chicken meat.
  2. Mix all ingredients and stir until fully combined.
  3. Salt and pepper to taste.
  4. Store and refrigerate in an airtight container.

This Rotisserie Chicken Salad Recipe is quick, simple and nutritious. We are making traditional chicken salad using store bought rotisserie chicken.

Ingredients

  • 1 Fully Cooked Store-bought Rotisserie Chicken
  • 2-3 Celery Stalks - chopped
  • 1/4 Cup Thinly Sliced or Chopped Red Onion
  • 1/2-3/4 Cup Mayonnaise
  • 1 teaspoon Brown Mustard
  • Salt/Pepper - to taste

Instructions

  1. Pull the chicken meat from the bones. This should get you approximately 3 cups of chicken meat.
  2. Mix chicken, celery, onion, mayo and mustard. Stir until fully combined.
  3. Salt and pepper to taste.
  4. Store and refrigerate in an airtight container.

  1. Hi – I just found your recipe from a quick Google search and I wanted to say my boyfriend and I both loved it!! He is generally not fond of the overly mayo heavy salads so this was perfect. Still has great texture / flavor and not at all dry. This will be my go to easy chicken salad – thank you!

  2. This is my go-to way to use up leftover rotisserie chicken – but it’s so good, I sometimes buy extra just to make it. It’s extra tasty in a buttery croissant 🙂
