Whole30 Paleo Compliant Orange Chicken Salad

It’s always great when you can make a meal that adults and kids love! This Mandarin Orange Chicken Salad will be a hit with with everyone because it is so fun and flavorful.

How To Make Orange Chicken Salad

Step 1: Roast chicken then let cool, chop or shred chicken.

Step 2: Combine chopped chicken, chopped celery, mayo, mustard, salt and pepper. Stir until combine. Add mandarin oranges then gently stir.

  • 5 Cutie Mandarin Oranges (peeled & segmented)

Ingredients

Chicken

  • 2 Lbs Boneless, Skinless Chicken Breasts, (pounded to equal thickness)
  • Olive Oil
  • Salt/pepper

Chicken Salad

  • 4 Celery Stalks, (chopped)
  • 1/2 Cup Mayonnaise
  • 2 Tablespoons Stone Ground Dijon Mustard
  • Salt/Pepper to taste
  • 5 Cutie Mandarin Oranges, (peeled & segmented)

Instructions

Chicken

  1. Preheat oven to 450ºF
  2. Coat chicken breasts with olive oil, salt and pepper then transfer to a roasting dish.
  3. Roast for 25-30 minutes or until 165ºF internal temperature. (time will vary depending on thickness of chicken)
  4. Let cool then chop or shred chicken.

Chicken Salad

  1. Combine chopped chicken, chopped celery, mayo, mustard, salt and pepper. Stir until combine.
  2. Add mandarin oranges then gently stir.

Notes

To make this chicken salad Whole30 compliant, use organic free range chicken, compliant or homemade mayo, compliant mustard.

  1. I happen to have all the ingredients for it. Except I used canned mandarin. Left over chicken without the skin. I’ll find out tomorrow when I have my lunch break.

  2. I made this and added half an envelope of dry ranch dressing and left out the salt. It was that something it was missing.
