Stuffed Cabbage Casserole Recipe in One Pot

I absolutely LOVE this casserole! Ever since I made this Easy Stuffed Cabbage Casserole this has been a regular type of meal at my house. I also have a Cabbage Roll Soup that I enjoy as well.

So naturally, now that I am eating low carb, I decided to create an Unstuffed Cabbage Casserole that is low carb and Keto friendly. I just make rice on the side for my daughter.

Is Cabbage Casserole Healthy

Yes! This hearty casserole is full of healthy veggies and lean protein. I think cabbage has been a super food before super foods were even a thing! You could also use ground turkey or chicken if you are avoiding beef.

I added an orange bell pepper to this recipe for flavor and color. If you are following a strict low carb diet feel free to omit the orange pepper. That will save you about 9 total carbs or 6 net carbs overall.

Is Cabbage Good For A Low Carb Diet

Yes! One cup of raw cabbage contains approximately 22 calories, 5 carbs and 2 grams of fiber. 3 net carbs.

That means that cabbage is most definitely Keto friendly and a great choice to fill up those vegetable carbs.

    1. Sorry about that, stupid autocorrect. It should read saute not sauce 🙂 I’m updating the recipe now. Thanks!

  1. This is yummy! I ate it all by myself in just a few days… it’s terrific. I used grain fed beef, butter to saute the onion and bell pepper, and topped it with greek yogurt. thank you for sharing!! awesome for Keto!

    1. Some veggies have natural occurring sugars, so the peppers and tomatoes.

  2. This was great! I didn’t use the pepper and added a can of crushed tomatoes the last 5 minutes-it was a great low carb replacement of the Pennsylvania Dutch version!

  3. Is there 34 grams of fat in the entire recipe? Or is there 6 servings and the entire recipe and you listed the nutrition for 1 serving? Thank you!

    1. I ran the ingredients through different nutrition calculator and this is the results:
      Total Fat 24.1g 31%
      Saturated Fat 10.6g 53%
      Cholesterol 107mg 36%
      Sodium 439mg 19%
      Total Carbohydrate 8.8g 3%
      Dietary Fiber 2.3g 8%
      Total Sugars 4.2g
      Protein 33.6g

I find that the nutrition calculators vary quite a bit. Frustrating but true.

    1. If the hamburger you are using produces a lot of grease then you can go ahead and drain it. I find the good quality hamburgers barely have any oil so it typically isn’t necessary. Thanks!

    1. Mine seems to cook just fine, of course, I do like a bit of bite to my cabbage. You can precook it if you prefer 🙂

    1. I suppose you could. I don’t have much experience with tofu so you would need to use your best judgement.

  4. This was great. I did add some tomato sauce to make it a bit “wet”…not sure the right term. But like I said, it was great!

  5. It hasn’t been updated? Because I was also super confused but this does look amazing!

  6. Very good, even if I left out the bell pepper ( did not have) and subbed brussels sprouts for the cabbage ( needed to use before they spoiled. Will make again for sure.

    1. This can be frozen. It may get a bit more liquid-y when thawed and cooked. Not a deal breaker for me but something to keep in mind 🙂

  7. We made this for dinner tonight and it Sold out!! My family isn’t a big fan of veggies, but they sure loved this one! I left the cheese out since we didn’t have any, and I don’t like driving in the rain and it was still delicious! Most likely I’ll make it again next week.

  8. Can you use sour cabbage in this recipe? I prefer sour cabbage over regular. Would cook time be the same? Thanks! So excited to try this!

    1. I’ve never tried it with sauerkraut so I can’t say for sure. I’m sure using a mix or sauerkraut and cabbage would work.

  9. This looks amazing. I had weight loss surgery 10 months ago so I’m always looking for a good healthy meal to try with my family. I was looking at the nutritional facts and it says serving size, does that mean for the entire meal? Thanks

    1. I estimated this to have 6 servings, so the nutritional info is per serving. But if you tend to eat small servings it may be less than the info listed 🙂

  10. Made this dish for dinner tonight. I was so excited to try it. After everything was done I have to say I was sadly disappointed with the meal. Yes it is edible but there is no flavor to it. I will not serve this dish ever again.

  11. Is the sugar content from the tomatoes? Also how much are you calculating in each portion?

    1. Yes, the sugars are coming from the tomatoes, onions and peppers.

  12. I never leave a comment on a recipe, but this one DESERVES recognition! I’m not doing Keto, just watching my carb intake. I love old fashion cabbage rolls my mom makes with ground beef and rice so it was a no-brainer for me to try this. Hands down one of my absolute favorite recipes of all time! I used ground turkey, and added a little more smoked paprika, but other than that, never changed one thing. It was so quick and easy! This will be on heavy rotation in my household for a long time coming. Thank you, Nicole!

  13. My husband and I are both on keto and this is what I’m making for our dinner and lunch. So excited to taste it! Thank you for your recipe!

  14. My mom used to put sauerkraut in between the cabbage rolls (halupki) when she made them. It was delicious

  15. This was good. I used Laura’s organic lowest fat beef to keep the saturated fat down. I also upped the spices as I thought it was a bit bland – added celery salt, caroway and several dollops of dijon mustard. I may add some mustard seed in the future as well. Thanks for the good fall recipe!

  16. I made this yesterday and thought it was awesome but I altered it slightly.
    I added fresh mushrooms,
Small can of tomato soup and a couple handfuls of chopped up bacon.
Once it was done and dished it up then I added the cheese and closed the lid.
The dishes I wouldn’t be eating right away I didn’t add cheese to them.
I also put some directly into 2 containers to freeze for later use.
I want to try chicken with it next time. Either chicken breast or some rotisserie chicken.
    Loved this one!

  17. This is the second time I made this. My husband and I loved it. I didn’t make any changes to the recipe except I did not serve it over rice. Will definitely make again.

  18. I made this last night for dinner and it was wonderful. Even my boyfriend LOVED it and requested that I make it again. I added a little more paprika than the recipe called for (since I’m a paprika fiend) and a few shakes of worcestershire sauce, other than that I followed the recipe exactly. This will without a doubt be added to our regular rotation. Thank you!

  19. This was delicious! I find myself craving for this more and more! Also freezes and reheats well.

  20. When I accidentally asked for two heads of cabbage instead of two heads of cauliflower (Spanish blunder), I had to find some recipes to use up my almost five pound beautiful head of cabbage (gave away the other one)! Being in Mexico, I prepared my own ‘fire roasted tomatoes’ and had already sliced the cabbage to disinfect it. None of these slight changes seemed to affect the outcome of the recipe. Cabbage would not be something I choose to eat, but this recipe was delicious and will be added to my recipes to keep on hand. Thank you for sharing!!

  21. Hello. I’ve made this recipe a few times now and really enjoy it. I don’t eat meat, so I substitute the Lightlife ground for it. It’s really good. Thank you for the recipe!

  22. I have to echo a previous review that said this dish was pretty tasteless! Only change I made was regular paprika instead of smoked. I even added a little cayenne for a bit of zip, plus extra oregano and garlic powder but still disappointingly bland.

  23. This was delicious! I skipped the onion, drained the tomatoes, used two bags of angel hair shredded cabbage, and added a little more seasoning. Such a great recipe!

  24. My friend added sauerkraut in with her cabbage (about 30 years ago) and I have done it since. Adds a unique flavor and it gives a different spin on plain cabbage rolls. I really like it and so does my family.

  25. Made this for dinner tonight and it was SO GOOD!!! Thank you for a fantastic recipe.

  26. This was absolutely delish! I used ground turkey instead of hamburger meat and it still was good! Also added a smidge more seasonings and red pepper flakes. Sooo good!!!

  27. I used a can of diced tomatoes and tomato sauce. 1.5 lb ground beef a red onion and a full head of cabbage. I added lots of salt, pepper and Italian seasoning. This really tasted like American Goulash. The cabbage is a great sub for pasta. I ate it for dinner and two lunches. Loved it and will make again. Great comfort food on a low carb diet.

  30. Would one bag of slaw mix be enough or should I use 2 bags since it cooks down so much?

  31. Thanks for sharing this Low Carb Unstuffed Cabbage Casserole Recipe, this one seems so delicious , will try this weekend . Thanks for sharing this one.

  32. No they are not hot…they are tomatoes that are roasted/charred a bit…but you can use regular chopped tomatoes as well.

  33. This was delicious!!!! Made a ton, so definitely have lunch for a couple of days. I wouldn’t change a thing!

  34. Oh my! This was fabulous! I doubled the fire roasted tomatoes, but otherwise kept everything the same. I had two servings tonight, then put the rest away so I wouldn’t eat any more!

  35. Can’t believe how delicious this easy recipe was. Everyone loved it, thank you so much for posting it, it is a meal I will be making often.

  36. Love this Low Carb Unstuffed Cabbage Casserole Recipe, this one seems super delicious and amazing . Super excited to try this one .Thanks for sharing this one with us , will surely try this one .

  37. This Low Carb Unstuffed Cabbage Casserole Recipe seems super delicious and amazing . Super excited to try this unique recipe, thanks for sharing this one with us .

  38. Hi! This looks delicious and plan to make it tonight! Grocery store gave me a big head of cabbage…can you estimate how many cups or how much cabbage should be used? Thanks!!

  39. Made tonight and neither my husband nor I liked it. Way too much cheese. I didn’t leave the cabbage in long but once I added the cheese, the cabbage was so soggy. I was basically meat and cabbage in a bowl. 🤷‍♀️

  40. Delicious! The whole family loved it. I doubled the recipe and used my new enameled dutch oven. It cooked well in there and looked pretty. This recipe does lend itself to alterations for personal taste but was great as written. Yes, this will be on my permanent list of recipes, I’ve tried others like this, this one is the best!

  41. I know this switches up the dish a bit, but whenever I make this I add a taco seasoning packet 😋

  42. I put a frozen cube of hatch green chile sauce in every casserole I make. You can never say a casserole is flavorless again.

  43. We thought we had a can of tomatoes, turns out it was only sauce, so we added that and a can of peppers in adobo sauce. It really turned out delicious! A bit spicy, but that’s to our taste anyways. Thankyou!

  44. This is now one of my staple recipes! Instead of the fire, roasted canned tomatoes, I actually use an 8 ounce can of tomato sauce. I’m not a fan of diced tomatoes. It is absolutely delicious!
