I love one pot meals. For the obvious reason of less dishes to wash. But also, we are all so busy, especially this time of year. So to be able to feed my family a quick and easy meal that is nutritious too, that is really important.

Stuffed cabbage rolls are one of my favorite meals. My family lineage is mostly Eastern European, so I must be genetically predisposed to love stuffed cabbage! Or, you know, it’s just delicious.

Traditional cabbage rolls can be a bit time consuming. This recipe has all of the great flavors with minimal time and effort involved. Lazy Comfort Food . . . that’s sorta my thang.

Easy Stuffed Cabbage Casserole

Easy Stuffed Cabbage Casserole is a one pot dinner recipe that is ready in 30 minutes or less! Perfect for a quick weeknight meal.

Ingredients

  • 1 Lb . Package Foster Farms Organic Ground Turkey
  • 2 Tablespoons Olive Oil
  • 1/2 White Onion - chopped
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1/4 teaspoon Dried Thyme
  • 1/4 teaspoon Ground Pepper
  • 1/2 teaspoon Sea Salt
  • 14 ounce Can Diced Tomatoes, low sodium
  • 1/2 Head Small Green Cabbage - chopped
  • 1½ Cups Water
  • 1 Cup Quick Cook Rice or Rice Blend, I used 10 minute cook rice & grain medley
  • 1 Cup Shredded Cheddar Jack Cheese
  • Chopped Parsley
  • Salt/Pepper To Taste

Instructions

  1. In large dutch oven over medium high heat, brown turkey with olive oil and onions.
  2. Reduce heat to medium; add garlic powder, onion powder, thyme, salt and pepper. Stir.
  3. Add diced tomatoes, water and rice to pot. Bring to a boil.
  4. Add cabbage, cover and reduce heat to medium low. Cook 10 minutes or until rice is tender. Add salt and pepper to taste.
  5. Top with cheese and cover 1-2 minutes to melt.
  6. Remove from heat and sprinkle with fresh chopped parsley.

Notes

Optional add ins: bell peppers, celery, carrots.

  1. I make something similar, but skip the cheese, use grass fed ground beef and use Quinoa instead of the rice. I also make a separate tomato sauce with butter/onion/flour to serve on top for an extra flavor boost.
    Either way, very tasty indeed!

  2. Just made this for dinner- was a little skeptical of the cheese but it was a great touch! I added a can of chickpeas but otherwise followed the recipe. I was a bit surprised when even both of my kids gobbled it up. Thanks!

  3. This was a really good recipe and I am not a fan of cooked cabbage…..but I made some adjustments. I always season the meat when browning, but still added all of the seasonings later I also like a little heat so I substituted the can of tomatoes for two cans of rotel. I will be cooking this one again.

    1. Cooking your preferred rice separately then adding it to the dish during the last few minutes of cooking will probably work best. Regular rice takes longer to cook than this casserole. But I’m sure it will be just as yummy. I love to use wild rice 🙂

  5. I am on a NO CARB diet and I made this without the rice and added Andouille Sausage and instead of water I added 1/2 cup chicken broth. It was DE-LISH!!!! Perfect No Carb meal.

  7. I made this! It was scrumptious! I left out the rice and used 1/2 cup of water. My bunch won’t eat rice. Doesn’t even need the cheese! But I love cheese so I used it! I didn’t have the onion chopped so I just used a little extra onion powder. LOVE it!! I will say this is the first time I’ve ever liked cabbage outside of an eggroll from the chinese buffet! My family hasn’t made it back from the pool yet to try it, but I’ve already had 3 helpings! lol, Thanks for a wonderful recipe. It just added another vegetable to my diet!

  8. I just found out I have an autoimmune disease called Hashimoto’s disease. It affects the thyroid and have been put on a fairly restrictive diet. I was finding it hard to come up with recipes that worked for my diet AND tasted good. This was both! I had to leave out the cheese but it was still really hearty and filling and plenty of leftovers so I won’t have to cook some other night! It’s will be going on the rotation!!

  10. I made this tonight and changed it slightly. I added 4 slices of thick bacon and some honey to sweeten it up. Used a bag of Cole slaw and stirred in some leftover rice at the end instead of cooking the rice in the recipe. Absolutely delicious!!

  12. This recipe was just moved to the top of our “go to” meal list. It is easy to make and so delicious.. Even my teenage boys love it. We have made it with and without rice. It’s great both ways.. We love cheese but we have been making it without it.

  13. Wow, this was amazing! I added carrot, celery and kale and used brown rice and chicken stock. We both loved it so much, it was flavorful, filling, and made a huge pot! So much easier than stuffed cabbage rolls. I will definitely make this again! Thanks for the great recipe!

    1. No, sorry Brenda. I have never tried freezing this specifically. I know that rice can get a little weird sometimes when it is frozen.

    Probably not the same recipe as Mom’s. Followed yours and came out delicious.

    I was just wondering if I make the rice separartely how much water should I eliminate from the recipe. Or do I still stick with the 1 1/2 cups? I’ve purchased everything so I can make this delicious dish tomorrow night!

    1. Hi Mel! Most of the water was needed for cooking the rice. I think you will be okay with just 1/2 cup of water to ensure that the casserole doesn’t dry out. Keep an eye on it and add additional water if needed. I hope you enjoy!

  18. Second time making it! We used grass fed ground beef and since I had some leftover beef broth from another recipe we used half broth half water. Added an orange bell pepper, too! We topped it with sharp white cheddar cheese. Thanks for this great recipe!

    1. I would make everything ahead of time except the rice. The casserole should reheat nicely but the rice might soak up all the moisture. You can always prep the rice when reheating the casserole then add it before serving. Enjoy 🙂

  20. Thank you great idea. I thought of that but put it all together with the cheese on top and put it in the oven at 350 for about 30 minutes. But I did put a smaller portion in the oven. This is a large casserole.

  21. I used regular white rice and cooked it until almost done before adding the cabbage. I used 3/4 bag of shredded coleslaw mix and added a can of tomato sauce and about 1/3 cup cider vinegar to mimic the cabbage roll taste. . Very healthy and hearty dish.

  23. You could also substitute cous cous or quinoa for the rice, and I think elbow macaroni noodles sound like a fun addition to replace the rice once in a while. The apple cider vinegar sounds like a good addition too. Celery, cilantro, carrots, corn, black beans, or even red kidney beans, think I’ll try this tonight. Thanks for the recipe!

  31. Making this right now. I’m using Jimmy Dean’s sausage instead of the turkey. I think I’d suggest boiling the cabbage down a bit before adding it.

  32. Just finished making this and waiting for everything to come together. I did add Savory Seasoning and some mild pepper flakes to this too. Some how I forgot to buy Cheddar cheese( ha! Living in Wisconsin…) so will substitute Gouda if wanted. I would’ve added bacon for more flavor, but were out. My husband will be the taste tester for this dish.▶️

  35. If you have a Trader Joes’ nearby their food is NEVER processed. We use their frozen rice as even though I cook expert dishes, I HATE rice and therefore only buy Trader Joes’ for my kiddo. Try it out, it’s awesome!

  42. Rice is a very important component when making a stuffed cabbage dish. I would only use regular cooked rice, not the processed quick rice. Also add some lemon and butter. More authentic stuffed cabbage dish. Delicious!

  43. I love cooked cabbage and rice so this was a very yummy, quick and easy dinner. We ended up adding quite a bit of salt and pepper to or individual plates so I think next time I’ll add stock instead of just water. Overall, we really liked it, and yes, there will be a next time 😁

  44. If you use regular rice and cook it separately as suggested below, do not add the 1.5 c of water, you don’t need it.
