I am a little obsessed with lunch recipes and ideas lately. My daughter just started kindergarten so packing a lunch box daily has taken over my brain!

Cranberry Almond Chicken Salad is a delightful variation of traditional chicken salad. It combines tender, shredded chicken with dried cranberries, slivered or sliced almonds, and a creamy dressing. The result is a perfect balance of savory, sweet, and nutty flavors. Just the right amount of crunch in every bite.

Chicken salad is great slapped in between sliced bread or rolled up into a wrap.

Serving Suggestions

  • On a sandwich: Serve it between slices of toasted whole grain bread or croissants.

  • In a wrap: Try it in a tortilla with lettuce and tomato.

  • Over greens: Spoon it onto a bed of mixed salad greens for a lighter meal.

  • With crackers: Makes a great appetizer or snack.

  • Over Rice: This makes for a super filling meal.

  1. Now this would be one delicious lunch! Your chicken salad looks terrific and it pairs wonderfully with rice 🙂

    1. You can always use store bought rotisserie chicken. Or, my preferred cooking method is below:

      Preheat oven to 425ºF
Salt and pepper chicken breasts, grease roasting dish with oil and place chicken in roasting dish.
Bake for 25-30 minutes or until internal temp reaches 165ºF (time varies depending on thickness)
Let cool then shred or chop.

  2. Thus is really good. I’ve made it twice. I have added green onions or chives and about the juice of a half of lemon. I use Boston bib or butter lettuce to make lettuce wraps. Yummy.

  3. Pinned this months ago and just now tried it. Delicious! I did however add some dill. My 2yr old thinks this is yummy as well
