I love the bright flavors in tabouli salad and I’ve been trying to incorporate more beans into my diet. That is where this recipe came from, garbanzo beans go perfectly with tabouli flavors. Adding chickpeas takes the place of the grains too.

  • Canned Chickpeas (garbanzo beans)
  • Grape Tomatoes
  • Cucumber
  • Garlic
  • Parsley
  • Mint
  • Lemon

Ingredients

  • 15 ounces Canned Chickpeas (garbanzo beans) - drained, rinsed*
  • 16 ounces Grape Tomatoes - halved
  • 1 Large Cucumber - peeled, chopped
  • 2 Garlic Cloves - grated or finely chopped
  • 1 Large Bunch Curly Parsley - finely chopped
  • 10 Mint Leaves - finely chopped
  • Juice of 1/2 Lemon
  • 1/2 Cup Olive Oil
  • Salt/Pepper - to taste
  • Small Pinch Sugar**

Instructions

    1. Prep all ingredients.
    2. Mix then serve.

Notes

*I like the skins peeled off the chickpeas, this is an optional step.

**The sugar is optional, it balances the acidity. Start with just a tiny bit, taste then add more if needed.
