Low Carb Roasted Shrimp with Broccoli

Sheet pan dinners are wonderful for those busy weeknights. Life can get hectic and having a 30 minute or less dinner option is a must, especially when following a low carb diet.

This shrimp and broccoli recipe keeps it simple and allows the fresh shrimp and broccoli flavors to shine. Rice or pasta are fantastic with this dish.

  • Broccoli Florets
  • Olive Oil
  • Dried Italian Seasoning
  • Peeled Deveined Shrimp
  • Salt/Pepper
  • Lemon
  • Red Pepper Flakes

How To Make Oven Baked Shrimp and Broccoli

  1. Preheat oven to 400ºF
  2. Toss broccoli with oil, Italian seasoning, salt and pepper. Transfer to greased, rimmed baking sheet.
  3. Roast broccoli for 15 minutes.
  4. Toss shrimp with oil, Italian seasoning, salt and pepper. Transfer shrimp to baking sheet with par-cooked broccoli.
  5. Roast for 8-10 minutes or until shrimp are cooked through. (time will vary depending on the size of the shrimp)
  6. Sprinkle with red pepper flakes and serve with lemon slices.

How Do You Know When Shrimp Are Cooked

Cook time will vary depending on the size of the shrimp so it is important to know when shrimp is fully cooked.

The outside should be pink and white, no translucent or grey color remaining. Shrimp curl into a ‘C’ shape when cooked as well.

I usually just pull the largest shrimp aside, cut it in half and check the middle for doneness. The last thing you want is to bite into your tasty shrimp dinner to find that the middle is not fully cooked through.
