PINEAPPLE PORK TENDERLOIN

This Pineapple Pork Tenderloin recipe is sweet, savory, slightly tangy. Pork tenderloin with a fruit island twist.

Ingredients

  • 2lb pork tenderloin
  • 1/2 cup crushed pineapple
  • 6 pineapple rings
  • 1/2 red pepper, diced
  • 1/2 orange pepper, diced,
  • 1/4 sweet onion, diced
  • 1 teaspoon sesame oil
  • 2 tablespoons low sodium soy sauce
  • 1/2 cup brown sugar
  • 1 tablespoon garlic, minced
  • 1/4 cup Hawaiian barbeque sauce

Instructions

    1. Preheat your oven to 400ºF
    2. In a medium bowl, mix sesame oil, low sodium soy sauce, brown sugar, garlic, and Hawaiian barbeque sauce.
    3. Stir in red pepper, orange pepper, sweet onion, and crushed pineapple.
    4. In a 9x13 baking dish spread out a small amount of your pineapple mixture and place your pork tenderloin over it.
    5. Make 12 slices along the pork tenderloin cutting ¾ the way through the meat leaving it attached at the bottom.
    6. Cut your pineapple slices in half and place 1 half in each tenderloin slice.
    7. Pour the remaining pineapple mixture along the pork tenderloin making sure to coat evenly.
    8. Bake uncovered for 40 minutes or until the internal temperature of the tenderloin reached 145ºF.
    9. Slice and serve and warm.
