Easy Quinoa Recipe

I absolutely LOVE quinoa.  Love It! This Cheesy Garlic Quinoa is at the top of my list.

Quinoa can be used in Sweet or Savory dishes.

Besides the quinoa, want to know why THIS recipe is so amazing!?!  Just look at the photo below.

Mushrooms.  Butter.  Roasted Garlic.

That is just the beginning.  Add cream and cheese to create this sinful side dish!

It is just too good!  Slap yo’ mamma good!  Handcuffs and mugshot good!  Haunt your dreams good.

 Eat it at your own risk!  It is worth it.

Just kidding, it’s not that bad for you.  Hey, it is gluten free after all!

Cheesy Mushroom & Roasted Garlic Quinoa

Cook Time: 20 minutes
Total Time: 30 minutes

This Cheesy Mushroom and Roasted Garlic Quinoa is full of creamy, cheesy, deliciousness.  Not only is it a gluten free, vegetarian side dish.  It is pure indulgence.

Ingredients

  • 6 oz Baby Bella Mushrooms - Cut into large pieces, crimini
  • 1 Tablespoon Chopped Roasted Garlic, 10-12 Roasted Garlic Cloves
  • 4 Tablespoons Salted Butter
  • 1/2 teaspoon Sea Salt
  • 1/4 teaspoon Ground Pepper
  • 1/4 teaspoon Dried Thyme
  • 1/4 Cup Heavy Cream
  • 2 Cups Cooked White Quinoa, cook quinoa according to package directions
  • 1/2 Cup Shredded Parmesan Cheese

Instructions

  1. Melt butter in 3 quart pot over medium heat.
  2. Add mushrooms to pot and cook 4 minutes. Stir frequently.
  3. Add garlic, salt, pepper and thyme. Cook 2 minutes. Stir frequently.
  4. Reduce heat to medium/low. Add cream, quinoa and parmesan.
  5. Heat and stir until cheese is melted. Serve immediately.

Notes

Yields approximately 3 cups.
Add chicken for a delicious dinner option.

  1. This was SO GOOD! Even my husband, who “hates quinoa” liked this. I subs. milk or the cream just because we didn’t have any. Delicious!

    1. Yes, this can be made ahead. It is at it’s best right away. The leftovers will bind a bit so when reheating add a splash of liquid to loosen it back up. Enjoy!

  2. This is my new favorite recipe! I put it in a casserole dish and place pan seared chicken breasts on top for an easy, complete, weeknight meal. I have honestly made it three times since discovering it a month ago and will be bringing it (sans chicken) as a new side dish to my family’s thanksgiving meal so that everyone can taste what I have been raving about the past month. Thank you very much for this simple, delicious, meal!

  3. I made this once for the fam and the rest is history. We have since added chopped asparagus to add a little “crunch” (I add them in with the Mushrooms and sauté) and then pair it with steak bites. It’s my husband’s favorite meal 🙂 Thanks so much for sharing!!
