  • Frozen Riced Cauliflower
  • Oil
  • Ground Beef
  • Garlic Powder
  • Ground Pepper
  • Sea Salt
  • Mustard

How Do You Make Cheeseburger Casserole

  1. Pan fry the cauliflower rice in oil over medium/high heat until browned. Transfer to greased casserole dish and spread in an even layer.
  2. Mix ground beef, garlic powder, pepper, salt, mustard, Worcestershire sauce and seasoning.
  3. Brown ground beef in large pan over medium/high heat, keep beef in large bite sized pieces. Using a slotted spoon, transfer to casserole dish in an even layer on top of cauliflower rice.
  4. Top with shredded cheese. Broil on high for 2-3 minutes to melt cheese.
  5. Top with sliced tomatoes, chopped lettuce and sliced pickles.
  6. Mix mayo, ketchup and chili powder. Serve with casserole.

Yes, this can definitely be made ahead. Prepare the casserole without toppings then cover and refrigerate. Reheat and add toppings before serving.

  • 20 ounces Frozen Riced Cauliflower
  • 4 Tablespoons Oil
  • 2 Lbs Ground Beef
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Ground Pepper
  • 1 teaspoon Sea Salt
  • 1 teaspoon Mustard
  • 2 teaspoons Worcestershire Sauce*
  • 2 teaspoons No Sugar Hamburger Seasoning**
  • 3 Cups Shredded Cheddar/Jack Cheese
  • Chopped Lettuce
  • Sliced Tomato
  • Sliced Pickle
  • 1/4 Cup Mayonnaise
  • 1 teaspoon Low Carb Ketchup
  • 1/4 teaspoon Chili Powder

Instructions

    3. Brown ground beef in large pan over medium/high heat, keep beef in large bite sized pieces. Using a slotted spoon, transfer to casserole dish in an even layer on top of cauliflower rice.

Notes

*Worcestershire sauce is optional. While it adds great flavor it also adds carbs.

**If you can't find no-sugar hamburger seasoning, use your favorite low carb seasoning blend for beef.

    1. When using frozen cauliflower I typically just fry it hot while still frozen. You can thaw then remove any excess liquid before frying and this would ensure a more crisp texture.
