The first Healthy Breakfast Recipe is these Egg & Sausage Frittata Muffins. Make these egg muffins ahead and just microwave in the morning. You and the kids can enjoy a nutritious protein packed breakfast that will keep you full and energized for hours!

Egg and Sausage Frittata Muffins

Yield: 12
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

These Egg and Sausage Frittata Muffins are a great make ahead breakfast on the go.

Ingredients

  • 8 O Organics Large Eggs
  • 1/4 Cup Milk
  • Pinch Salt/Pepper
  • 3 O Organics Hot Italian Organic Chicken Sausage, (chopped)
  • 12 O Organics Grape Tomatoes, (chopped)
  • 4 Tablespoons O Organics Mild Salsa
  • 1 Cup Mexican Style Blend Shredded Cheese

Instructions

  1. Preheat oven to 325ºF
  2. Whisk together eggs, milk salt and pepper. Set aside.
  3. Generously spray a 12 cup muffin tin with nonstick spray.
  4. Divide the sausage and tomatoes between the 12 muffins.
  5. Pour egg mixture into each muffin cup (make it as even as possible). Drop 1 teaspoon of salsa into each cup. Sprinkle cheese on top.
  6. Bake for 15-18 minutes or until the edges begin to brown.
  7. Remove from muffin tin and transfer to container. Store in the refrigerator.
  8. To reheat, microwave sausage egg muffin for 20-30 seconds.
  9. If reheating from frozen. microwave 30-60 seconds.
