CHIMICHURRI STEAK SANDWICH
This CHIMICHURRI STEAK SANDWICH is full of flavors and textures. The ultimate satisfying lunch or dinner.
Ingredients
- 1 lb ribeye, sirloin or flank steak
- 1 tbsp dried oregano
- 1/2 tbsp pepper
- 2 -3 tbsp olive oil
- 1½ tsp honey
- Half of a lemon
- Salt to taste
- Chimichurri:
- Large bunch of parsley
- 2 - 3 garlic gloves
- 1 tbsp dried oregano
- 1 ½ tsp chili pepper flakes (option)
- 1 tbsp balsamic vinegar
- 2 tbsp olive oil
- 2 roasted red peppers
- Half of a lemon
- Salt to taste
- Garnish:
- 1 large tomato - sliced
- 1 medium red onion - thinly sliced
- Hummus (or sub with mayo)
- ¼ cup of Blue cheese(or preferred cheese)
- 1 cup of fresh greens mix
- 1 Ciabatta Roll
Instructions
Prepare Chimichurri:
Chop parsley, red peppers and garlic. In a bowl, mix all the ingredients: parsley, red peppers, garlic, oregano, chili, olive oil, balsamic vinegar, salt, and pepper to taste. Mix well and refrigerate until the steak is prepared.
Prepare Steak:
In a bowl add the beef steak, spices, honey, olive oil, lemon salt and pepper to taste. Mix well. Leave them while you prepare the other ingredients for the sandwich or you can leave the steaks to absorb the spices in the refrigerator for 1 hour or more.
Heat a pan with 2 tablespoons olive oil over medium/high. Place steaks in the pan for 5-6 minutes on each side or until cooked to desired doneness. Let rest 5 minutes then cut into thin slices.
Assemble Sandwiches:
Cut the Ciabatta in half. Optional: Heat skillet over medium. Place the ciabatta with the soft side down in the pan. Heat 1-2 minutes or until golden along the edge of the ciabatta. Spread hummus on the bottom of ciabatta. Add the greens, steak and chimichurri. Sprinkle with blue cheese and top with red onion.
