CORNED BEEF SANDWICHES

These Baked reuben Sandwiches are so tasty and simple to prepare. Perfect for using up leftover corned beef brisket. These sliders also work with sliced deli corned beef or pastrami.

One thing is for sure, these melty flavorful sliders will be gobbled up in a hot second!

INGREDIENT OPTIONS:

  • Use leftover corned beef, sliced corned beef or pastrami.
  • Sliced Swiss can be subbed for sliced munster or havarti.
  • Thousand Island Dressing can be swapped for dijon or honey mustard if preferred.
  • Hawaiian rolls make these sliders extra soft and delicious, but any slider rolls will work as well.

BAKED REUBEN SLIDERS

These BAKED REUBEN SLIDERS are a quick, easy and absolutely delicious dinner idea. Thinly sliced corned beef, Swiss cheese, sauerkraut and thousand island dressing tucked inside soft Hawaiian rolls then baked to melty perfection.

Ingredients

  • 16oz package Hawaiian rolls
  • ½ cup and + 2 teaspoons Thousand Island dressing, divided
  • 1 lb thinly sliced deli corned beef pastrami (or leftover shredded corned beef)
  • 8 ounces Swiss cheese
  • 1 cup sauerkraut, thoroughly drained
  • 4 tablespoons unsalted butter, melted
  • 1 ½ teaspoons Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons minced dried onion
  • 1 teaspoon poppy seeds
  • ½ tablespoon fresh minced parsley

Instructions

    1. Preheat oven to 350 degrees F. Spray bottom of a 9x13 baking dish with cooking spray.
    2. Slice your sheet of Hawaiian rolls in half crosswise.
    3. Spread half cup of Thousand Island dressing onto the bottom of the Haawaiian rolls.
    4. Layer half of the Swiss cheese on top of the dressing.
    5. Evenly spread the sauerkraut across the cheese.
    6. Layer the meat on top of the sauerkraut, followed by a layer of the remaining Swiss cheese.
    7. Place the top bun layer back onto the sliders.
    8. Mix together the melted butter, Dijon mustard, 2 teaspoons of Thousand Island dressing, dried onion and poppy seeds.Generously brush mixture across the tops of the slider buns.
    9. Cover the baking dish with foil and bake in the oven for 15-20 minutes, or until the sliders are cooked through and the cheese is melted.
    10. Optional* place the cooked sliders under the broiler for 2-3 minutes to brown the top of the rolls.
    11. Garnish the tops of the warm sliders with the fresh minced parsley and serve immediately.

Notes

Store leftovers in an airtight container for up to 3-4 days in the refrigerator.
