  • 3 chicken breast, boneless, skinless
  • 3 chicken thighs, boneless, skin on
  • ¼ sea salt
  • ¼ ground black pepper
  • ½ cup buttermilk
  • 1 egg
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon sea salt
  • 1 teaspoon cayenne pepper
  • 2 cups panko breadcrumbs

BAKED BUTTERMILK CHICKEN is everything you want in a comfort food dish. Crispy on the outside, juicy on the inside, and packed with flavor. Proof that you don’t need a deep fryer to get that satisfying crunch.

Ingredients

  • 3 chicken breasts, boneless, skinless
  • 3 chicken thighs, boneless, skin on
  • salt/pepper
  • ½ cup buttermilk
  • 1 egg - beaten
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon sea salt
  • 1 teaspoon cayenne pepper
  • 2 cups panko breadcrumbs

Instructions

    1. Preheat the oven to 410ºF.
    2. Place chicken breast and chicken thighs in a large bowl. Season with salt and pepper. Pour buttermilk and egg onto chicken. Toss to cover the chicken pieces. Set aside for 15 minutes.
    3. In a small bowl, combine oregano, garlic, salt, cayenne pepper and panko breadcrumbs.
    4. Generously grease a baking sheet.
    5. Dredge the chicken one by one in the panko breadcrumb mixture. Place on the baking tray. Spray with cooking spray.
    6. Bake for 12 minutes then flip carefully and bake for 10 minutes. Finish by broiling for 5 minutes until golden and crispy. Place the baking tray on the counter and allow it to sit for 2 minutes. Cook chicken to 165ºF internal temp.
