- 3 chicken breast, boneless, skinless
- 3 chicken thighs, boneless, skin on
- ¼ sea salt
- ¼ ground black pepper
- ½ cup buttermilk
- 1 egg
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- ½ teaspoon sea salt
- 1 teaspoon cayenne pepper
- 2 cups panko breadcrumbs

Ingredients
- 3 chicken breasts, boneless, skinless
- 3 chicken thighs, boneless, skin on
- salt/pepper
- ½ cup buttermilk
- 1 egg - beaten
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- ½ teaspoon sea salt
- 1 teaspoon cayenne pepper
- 2 cups panko breadcrumbs
Instructions
- Preheat the oven to 410ºF.
- Place chicken breast and chicken thighs in a large bowl. Season with salt and pepper. Pour buttermilk and egg onto chicken. Toss to cover the chicken pieces. Set aside for 15 minutes.
- In a small bowl, combine oregano, garlic, salt, cayenne pepper and panko breadcrumbs.
- Generously grease a baking sheet.
- Dredge the chicken one by one in the panko breadcrumb mixture. Place on the baking tray. Spray with cooking spray.
- Bake for 12 minutes then flip carefully and bake for 10 minutes. Finish by broiling for 5 minutes until golden and crispy. Place the baking tray on the counter and allow it to sit for 2 minutes. Cook chicken to 165ºF internal temp.
